Cinnamon Apple Crumb Cake
1 1⁄2 cups all-purpose flour
1 cup Franz Apple Cinnamon Hot Cereal & Baking Mix
3⁄4 cup sugar
1 teaspoon cinnamon
1⁄2 teaspoon baking powder
1⁄2 teaspoon baking soda
1⁄2 teaspoon nutmeg
1⁄4 teaspoon salt
1⁄4 cup ricotta cheese
8 tablespoons butter (chilled and cut into pieces)
3⁄4 cup sour cream
2 egg whites (lightly beaten)
Powdered Sugar
Filling
2 cups green apples (peeled and chopped)
2/3 teaspoon flour
1/3 cup raspberry jam (optional)
Heat oven to 350°. Lightly grease 9” springform pan or round metal cake pan with cooking spray. Combine flour, Franz Hot Cereal & Baking Mix, sugar, cinnamon, baking powder, baking soda, nutmeg and salt in a large bowl; mix well. Cut ricotta cheese and butter into mixture until crumbly. Measure out 1 1⁄2 cups of the mixture and reserve for the topping. In a small bowl, combine sour cream and egg whites then add to remaining mixture, stirring just until moistened. Spread batter over bottom and 1⁄2 inch up the sides of the pan. Filling: combine apples, jam and flour and spoon over batter. Top with the reserved topping mixture. Bake 50-55 minutes or until golden brown and center is firm to touch. Sprinkle with powdered sugar. Serve warm.
