Raisin Oatmeal Ice Cream Sandwiches
1 cup butter (softened)
1 cup brown sugar (firmly packed)
1⁄2 cup granulated sugar
1 teaspoon vanilla extract
1 1⁄2 cups all-purpose flour
1 teaspoon baking soda
1⁄2 teaspoon cinnamon
1⁄2 teaspoon salt
3 cups Franz Raisin Oatmeal Hot Cereal & Baking Mix
1 quart ice cream or frozen yogurt (softened)
Preheat oven to 350°. In a large bowl, beat butter and sugars with an electric mixer. Add eggs and vanilla; beat well. Combine the dry ingredients together and slowly add to the butter and sugar mix. Mix until just blended, do not overmix. Drop rounded tablespoons onto ungreased cookie sheets. Bake 10 to 12 minutes or until golden brown. Cool 1 minute on cookie sheets and then transfer to a wire rack and cool completely.
To make sandwiches, spread softened ice cream onto one side of a cookie and top with a second cookie. Wrap individually in plastic wrap and freeze.
Makes about 24 sandwiches
